OUR PHILOSOPHY

For centuries, our ancestors utilized every part of the animals they slaughtered. Today, we call this the “nose-to-tail” approach, which involves using not only prime cuts of meat but also incorporating lesser-used parts such as organs, bones, and in our case, fat! This approach aims to promote sustainability by reducing food waste and maximizing the use of the entire animal. In doing so, we can also minimize the ever-rising costs of food. When farmers are able to utilize and/or sell more parts of their animals, the cost of raising those animals becomes subsidized over time. In turn, this allows for higher-quality care and lower food costs.

 

 


Embracing a nose-to-tail approach ensures that no part of the animal goes to waste, promoting a sustainable and responsible use of resources. This approach acknowledges the interconnectedness of various industries and reduces the overall demand for livestock, potentially decreasing the environmental impact associated with large-scale farming.

We believe that utilizing every part of the cow reflects a deep appreciation for the animal's life, recognizing its sacrifice for human sustenance. By finding value in all parts, from meat and organs to bones and hide, we can demonstrate a more respectful and mindful relationship with the animals we rely on for food, contributing to a more compassionate and sustainable food system.
